Memorial Day Weekend Menu



I can smell the bbq going right now....I can see the picnic tables filled with foods.  Foods, that more than likely, I can't enjoy.  Holidays, being gluten free, are the hardest.  So many delicious foods, that I used to enjoy, are now off limits because of their ingredient list.  BOO!!!  So, to get everyone ready for the big day, here is list of a few Gluten Friendly dishes that you and everyone else can enjoy.  Hey, they probably won't even notice and will be pleasantly surprised when you tell them (after they have eaten it) that its gluten free!!

Lets bring baking back

If your anything like me, you enjoy some nice squishy bread or a slice of cake covered with buttercream icing....or even better yet, a cinnamon roll drenched in icing!  Yum.  (And now I'm officially craving sweets).  Oh, how I remember when all of those little treats were just a grocery store or bakery away.  Now, not so much.  Anything I want (thats not packaged) that is a baked good, is either, super expensive, frozen (which usually isn't too bad) or I have to make myself.  I usually will grab a few gf packaged cookies from my pantry to cure my sugar tooth or throw some Pillsbury GF cookie dough in the oven for some faux homemade cookies if I have time.  But what I would really love to do is recreate all of my favorite pastry and baked goods that I've given up being gluten free.

My goal is to recreate my moms famous pound cake.  I know it sounds like an easy feat, but let me tell you, that its not.  3 years now I have tried to make this cake, and I can't get the flours and xanthan gum equaled out correctly.  But I am not giving up, because it will be totally worth it when I get it right.  Either its too dry, or too moist or flat as a pancake or it overflows.  There is always a mistake somewhere, but each time I try not only do I get closer, but I am refusing to give up on having my old treats just because I am gluten free.

So, here are some tips on how to bake properly gluten free that I have learned......

1.....Make sure you use the proper flours or flours for your recipe.  Check online which flours would work best in place of the usual white flour.  Sometimes almond flour will work whereas, quinoa flour wouldn't  Just do some research.  If it doesn't matter, use the one that you like the most. I prefer the quinoa or almond four because of the nutritional values, but everyone is different. Push comes to shove, buy all purpose gluten free flour.  King Arthur makes an amazing flour and so does Bobs Red Mill.

2....Xantham or guar gum.  These are a must!  This is what makes things spongy and moist like in gluten filled items.  If your mixing your own flours, make sure that you use one or the other of these.  With some all purpose flours, its not necessary, but you still need to double check.  Without one of these (or too much of these) your pastry item will not be what you expected.  Trust me!

3.....Have realistic expectations.  We all remember, at least to a certain degree, what gluten filled items taste like.  I know for a fact that I can s recall quite vividly what a Cinnabon cinnamon roll tastes like to this day and its been over 5 years since I've had one.  So I know that recreating a cinnamon roll and it being gluten free, will not be easy nor will it taste the same.  And you know what.....thats okay.  Just because it tastes different doesn't mean it isn't as good.  You may in fact find that things taste better, especially since its homemade and your not suffering afterwards.

4.....Follow the recipe.  Sounds pretty simple, but baking is so precise.  But baking gluten free requires even more precision. Don't let this sway you though, because the payoff is worth every single moment of tiptoeing around the kitchen.

5.....Enjoy and share your creation.  Creating a gluten free item regardless if its a cupcake or a lasagne, is something that you should not only enjoy but congratulate yourself on for doing.  Its not easy to replace items and it still come out tasting good.  So, pat yourself on the back and share your victory with those in your house (if theres enough to around once your done eating your share.....I mean, you did make it, you do get first dibs).


Honestly, cooking and baking gluten free isn't hard.  It does require a few more steps and ingredients, but in the end, its well worth the effort.  I have perfected mac n cheese, teriyaki (replace soy sauce for Tamari gf soy sauce. fried rice, all types of cookies, breads, cupcakes ( Lemon cake is one of faves) and more.  I will not stop.  And I promise you, I will perfect my moms pound cake and when I do, there will not be enough to share once I'm done devouring it!

Putting Gluten on your skin


Over the years as a gluten free girl, I have learned that gluten just isn’t in foods and drinks. I've learned that it’s also in topical items such as lotion, shampoo, conditioner and makeup!  Yes makeup…one of my favorite things in the world.  For a person that isn't living a gluten free life, they don’t notice that Aveeno bottles have this piece of wheat on the front or the oats some of the  St Ives lotions have on their bottles that adorn the cosmetic shelves at the Target and grocery stores nationwide.  We slather on our skin each and every day these products without a second thought.  But should we?  Even as a gluten free person, there are so many products on the shelves that boast the power of oats and wheat as to their age defying agents, that we totally don't notice them.  For some people even living a gluten free lifestyle topical products don’t necessarily affect them, but be careful.  Remember that your skin is the biggest organ your body has and it absorbs everything you put on it.  Think of lip items alone.  You put it on your lips, you lick your lips or drink some coffee, and now you have ingested into your body this gluten filled lip balm and your wondering why you are having a reaction to your ‘gluten free coffee beverage’.  It wasn’t your beverage to blame, but your lip care item that’s the culprit.  Same thing with your lotion that you put on your hands; you slather on your favorite lotion that is made with oats and then eat your favorite Glutino pretzels which are gluten free.  Shortly after, you feel the affects of being “glutened” and your curious as to why?!?!  Cross contamination is again the culprit and you did it to yourself.  Shame Shame!

I can say all of these things because I have done these things myself and have learned the hard way.  The very hard way!  So, I have researched online about different ingredients that have gluten in them  and the gluten containing ingredients that you may find in topical items that might confuse you (like they did me prior to researching and delving into each and every ingredient). 

A few companies have put out amazing lists of product lines that are Gluten Free.  Neutrogrena Naturals are gluten free!  Red Apple Lipstick is entirely gluten free.  I haven't tried them yet, but I have heard they are amazing!  Cetaphil says they use vegetable-based ingredients and not wheat.  YAY!  Vaseline Lip therapy is also gluten free.    

Read and familiarize yourself with these items below that are wheat based.  The list is ever changing and ever growing as more and more items are being made with wheat since it’s cheaper than corn or rice.  So be diligent with your health and what you put in and on your body.  When in doubt, don't use it and research!

First Ever

Well, this is a first.  But then again, isn't life full of 'firsts' anyways?!?!

Lets start off with the formalities.....my name is Katy and I am gluten free!  I am not a medical professional whatsoever.  In fact, I dislike going and getting poked and prodded for every little thing.  I am a mother of twins, working and living in Great Falls.  I love what I do for a living (I work retail) and I like living in Montana (been here 1 year so far).  I'm not a fan of the snow by any stretch, but my kids love it and thats what makes it worth it.  I have been living a gluten free lifestyle for 4 years now.  I was not deemed Celiac, but I refuse to eat gluten to be tested to be medically diagnosed as Celiacs.  I found out about my gluten intolerance after a surgery I had and my body had a negative reaction to the intense surgery and this is how it came to be.  At first, I didn't know what I could or couldn't eat and what 'cross-contamination' was, but over time, I learned....mostly the hard way.  THIS is why I am hoping this blog along with the Facebook page will help others.  I wish I would have had someone to help me learn the ropes about living gluten free.

The purpose of this blog is to talk about gluten free.  Its mainly about Great Falls, Montana gluten free eating, but obviously we eat everywhere.  DUH!  I've lived in a bunch of different cities and thus far, Great Falls has been the hardest for eating and finding things that are gluten free.  I"m hoping that this blog will not only shed light on those living in the area that have to eat gluten free because of medical reasons, but will also open the eyes of those who don't know what "gluten free" means and why its a big deal.

So, lets get this ball rolling.  I'm going to post as much as possible and I hope that you find it relevant and you respond back.  I would love nothing more than to have meetings and potlucks of delicious gluten free dishes with everyone in the area.
